1 tablespoon olive oil
2 garlic cloves, minced
2 cups sliced mushrooms
4 scallions, sliced

½ teaspoon pepper
1 lb boneless skinless chicken breast, but in 1/2 inch pieces

Heat oil in a medium size skillet over medium heat.

Add garlic to pan and cook 1 minute.

Stir in Mushrooms, scallions, 1/4 tsp salt and pepper.

Reduce heat to medium.

Add chicken pieces to pan and sprinkle w/remaining salt and pepper.

Cook, stirring for 4 minutes or until cooked through.

Stir in soy sauce, vinegar and cilantro.
