Chewy and Fluffy Steamed Bread

   Pour water into a pot and heat over high heat.

   Place bowl on a scale, put sieve on top and calibrate the scale.

   Add flour and baking powder.

   Add the sugar and mix with a spoon.

   Pour milk and mix with spoon until evenly combined (about 30 seconds).

   In ramekins, insert aluminum cups and then paper cups inside those, then pour in the liquid.

   Place the ramekins in the pot (the water should come 1/3 of the way up the pot, less than half of ramekins.

   Make sure water does not get into ramekins when it boils).

   Cover the pot with a kitchen towel and put chopsticks on top and cover with a lid.

    Steam on high heat for 15 minutes.

    For black Sesame Kinako, use 10 g of kinako and 5 g of black sesame.
