Cherry Coke Salad

   When you drain the can of cherries, reserve the juice in a glass measuring cup. Add enough water to make 1 cup. Heat the mixture in the microwave until boiling. Put the cherry gelatin mix into a large bowl and add the boiling cherry juice. Stir to dissolve the gelatin. Add softened cream cheese and blend thoroughly (sometimes I use a hand mixer). Add drained pineapple, drained cherries, pecans and the Coke. Stir everything together really well, pour into a 6x10-inch Pyrex dish and chill. I sometimes freeze mine then take it out of the freezer 15 minutes before serving.
