1. Preheat oven to 400 Fahrenheit and butter bottom of deep baking dish.

2. Using either fresh cherries or drained canned cherries, saute fruit in butter over medium. Add bourbon and reduce heat to low.

3. Separate eggs and put egg whites aside. Add milk and vanilla to egg yolks.

4. Add flour and sugar to egg yolk mixture, whisking thoroughly until completely mixed.

5. Beat egg whites into a meringue.

6. Fold meringue into egg yolk mixture.

8. Pour cherries into prepared dish. Sprinkle with almonds. Pour egg mixture on top.

9. Cover dish with foil and put in the oven. At 30 minutes, the cloufits will have puffed up nicely. Remove foil and let brown until golden on top, then remove immediately. Can also be baked in individual ramekins.

10. Serve warm with plain, full-fat yogurt.
