1 ¼ cups boiling water
⅜ teaspoon salt
½ cup whipping cream, whipped
¼ cup sugar
1 ½ teaspoons butter
1 ½ teaspoons plain gelatin
1 ½ cups milk, plus
3 tablespoons milk
½ teaspoon almond extract
1 ½ cups milk
20 ounces cherry pie filling

In a heavy pot pour the boiling water over the rice and salt.

Bring to a boil.

Remove from heat, cover and let stand until all the water is absorbed.

Stir in 1 1/2 cups milk, sugar and butter and cook over very low heat for 15 minutes.

Meanwhile, soften gelatin for 5 minutes in the 3 tablespoons milk.

Add to cooked rice mixture, stirring until dissolved.

Remove from heat, add almond extract and cool.
