2 Tbsp. flour
1 tsp. dried mustard
1 tsp. salt

1 c. light cream
2 c. Spam, cubed
1 c. sharp Cheddar cheese, shredded

Cook sliced potatoes in boiling water (salted) 15 minutes.

Drain, saving 1 cup of cooking liquid. Place potatoes in casserole dish.

Melt butter in large skillet. Add chopped onion and brown slightly; add paprika, thyme, flour, dried mustard, salt and pepper.

Stir in reserved liquid; add light cream and cook until thick, stirring constantly.

Add cubed Spam and 1/2 cup shredded sharp cheese.

Pour sauce over potatoes; toss lightly.
