2 Tablespoons Butter
1- 1/2 teaspoon Minced Garlic
1/2 Red Onion, Diced
1/2 teaspoons Nutmeg
1/4 teaspoons Thyme
1/2 teaspoons Salt
1 cup Pumpkin Puree
1 cup Fresh Ricotta Cheese
1/2 cups Parmesan Cheese
3/4 cups Milk
3/4 cups Mozzarella Cheese

Boil pasta until al dente.

Drain and set aside.

Preheat oven to 350 degrees F. Lightly spray a 9x13 baking dish with cooking spray.

Add butter to large skillet and melt over medium heat.

Once butter is melted, add garlic and onion.

Saute for 23 minutes, or until tender.

Add nutmeg, thyme, and salt to onion mixture.

Cook on medium low heat for 34 minutes and then let simmer for 5 minutes.

Add pasta to skillet and toss to combine.
