1 c. potato water
3 Tbsp. oleo
small onion
1 1/2 Tbsp. flour
1 tsp. dry mustard
1/2 tsp. paprika
salt and pepper
1 c. milk
1 can Spam, cubed
1 c. diced cheese

Cook potatoes with skins on.

Cool, peel, slice or dice in casserole.

Reserve 1 cup potato water.

Melt oleo and simmer onion in oleo.

Add flour, dry mustard, salt, pepper and paprika. Add the cup of potato water; mix well and add 1 cup milk.

Cook until it thickens.

Add cubed Spam and 1 cup diced cheese.
