Cheddar cheese sauce

   Melt butter in 2 qt saucepan

   Add finely diced onion and garlic and allow to sweat.

   Stir in flour with wire whisk.

   Cook, on medium heat stirring frequently for about 5 minutes.

   It should not be thick.

   Add milk slowly.

   About a cup at a time.

   Allow to thicken slightly between additions.

   Once all milk is added allow to heat, not boil.

    Add shredded cheese while stirring.

    Stir until cheese is melted.
