1/2 cups Unsalted Butter, Softened
1/4 cups Fresh Chives Finely Snipped
FOR THE BISCUITS:
2-1/4 cups All-purpose Flour
1/2 teaspoons Baking Powder
1/2 teaspoons Baking Soda
1/4 teaspoons Salt
3 Tablespoons Butter, Softened
1/4 cups Chopped Scallions
2 cups Sharp Cheddar, Shredded
1/2 cups Fresh Grated Parmesan Cheese
1 cup Buttermilk
1 Egg White, Beaten With 1 Tablespoon Buttermilk, For Eggwash

Preheat oven to 450u00b0F. Cover baking sheet with parchment paper.

For the chive butter, in stand mixer with paddle attachment, cream butter. Add chives and mix until smooth and incorporated. Set aside.

For the biscuits, mix flour, baking powder, baking soda and salt in medium bowl. Cut butter into flour mixture with pastry knife until butter crumbles. Mix scallions, cheddar and Parmesan into flour mixture. Pour buttermilk into the bowl and stir just until combined. Drop by large rounded spoonful's on to the cookie sheet (approximately 1/4 cup).

Brush tops with egg wash. Bake for 13-15 minutes or until golden brown. Serve with chive butter.
