1
Preheat the oven to about 200C.
-
2
Grease a round cake tin or springform pan, then push the tortilla into the base so that it creates a sort of pie crust.
-
3
It will flute around the edges a little; thats okay, the mix will push it out.
-
4
Put the pie crust in the oven to crisp a little while you make your mix.
-
5
In a large bowl, whisk the eggs with as much salt and pepper as you like.
-
6
Add the diced spinach and onion to the mix.
-
7
(Frozen spinach is okay, but dont use frozen onions, thats just nasty.)
-
8
Pour this mix into the pie crust which should just be getting crispy now.
-
9
Then scatter the cubes of cream cheese right on top of the eggy spinachy mix.
-
10
(Bursts of cream cheese in this are awesome!)
-
11
Then sprinkle with Parmesan cheese and maybe a bit more salt and pepper and chuck it in the oven at 200C for 20-25 minutes (depending on how good your oven is, mine is terrible).
-
12
Its ready when a skewer comes out clean and the Parmesan is just starting to go brown.
-
13
Your crust should just be crispy at the very top but soft and flaky on the bottom.
-
14
This is a basic recipe.
-
15
Mix it up; asparagus also works well, as does bacon and finely sliced potato.

Have fun!
