Preheat oven to 400u00b0F. Lightly grease and flour 4 - 12 oz ramekins. Arrange on a baking tray.

Cook cauliflower in boiling salted water for 10-12 mins. Drain then process in a food processor until smooth.

Meanwhile, melt butter in a saucepan over medium heat. Add flour and cook, stirring, for 1 min. Gradually mix in milk until smooth. Cook, stirring, until mixture boils and thickens. Simmer for 3 mins. Remove from heat and let cool slightly. Season. Transfer to a bowl and whisk in cauliflower puree, egg yolks and mustard. Let cool.

Whip egg whites to stiff peaks then fold into cauliflower mixture along with cheese, ham and chives. Distribute between ramekins and bake for 20-25 mins, or until puffed and just set. Serve immediately with green beans on the side.
