Ingredients: 1 cup Butter Or Margarine (I Used I Can't Believe It's Not Butter); 1 cup Brown Sugar; 2 whole Eggs; 2 teaspoons Vanilla; 2 cups Flour; 1 teaspoon Baking Soda; 1 teaspoon Salt; 2 whole Carrots, Shredded; 1 cup Pineapple, Chopped; 1 cup Shredded Coconut; 1 cup Chopped Walnuts

1 cup Butter Or Margarine (I Used I Can't Believe It's Not Butter)
1 cup Brown Sugar
2 whole Eggs
2 teaspoons Vanilla
2 cups Flour
1 teaspoon Baking Soda
1 teaspoon Salt
2 whole Carrots, Shredded
1 cup Pineapple, Chopped
1 cup Shredded Coconut
1 cup Chopped Walnuts

Cream together the butter and brown sugar until fluffy. Add eggs, one at a time, until well mixed. Add vanilla and mix well. Scrape the sides of the bowl.

Add the flour, baking soda and salt. Mix well. Stir in the remaining ingrediants.

Drop by tablespoonfuls onto an ungreased baking sheet.

Cook at 350 degrees for about 11 minutes until light golden brown.

Frost with your favorite cream cheese recipe if you like!

Note: you could add in the spices normally found in carrot cake, but I left them out due to a co-worker's allergy to cinnamon.
