Cut the pears into eighths (for 16 slices total).

Put the sugar and butter in a frying pan and turn the heat to medium.

Heat while continuously shaking the pan until the mixture has a deep brown color.

Once it has browned and it begins to smoke, add the pears all at once.

Be careful of splatters!

Quickly cover with a lid and shake the pan well to coat the pears in caramel.

Turn the heat down to low and simmer while shaking the pan occasionally until the pears are soft.

When most of the liquid has disappeared and the pears are soft, it's ready.

Add heavy cream to the remaining caramel in the frying pan and lightly simmer to make the caramel sauce.
