Caramelized Onion & Goat Cheese Pizza

   Preheat oven to 425 F.

   In a cast iron (or regular) skillet over medium/high, add olive oil and onions, stirring occasionally until caramelized.

   For me this takes a good chunk of time.

   Plan on 15 minutes minimum depending on the type of cook top you have.

   Add balsamic vinegar and sugar into a small saucepan.

   Bring to a boil and then reduce to a simmer for about 10 minutes while stirring occasionally.

   The sauce will reduce and become thicker.

   Roll out pizza dough until it fits a medium to large pizza pan.

   Put it on a pizza stone or pizza pan.

    Sprinkle mozzarella over dough, followed by caramelized onions and goat cheese.

    Bake in the oven for 15-17 minutes.

    Remove from oven.

    Top with baby kale and red pepper flakes.

    Drizzle with balsamic syrup.
