Cook, stirring, for 5-10 mins, until polenta comes away cleanly from side of pan. Stir in 1/2 each of the butter and Parmesan cheese.

Preheat the broiler on high. Pour 1/2 of polenta into prepared dish. Spread with onion mixture then remaining polenta. Sprinkle with remaining Parmesan cheese and dot with remaining butter. Broil for 5 mins, until golden. Cut into squares. Serve with salad.
