Caramel Icing

   Combine sugar, baking soda and cream.

   Cook until the mixture forms a soft ball in cold water (238u00b0).

   Remove from heat and cool until lukewarm.

   Beat until creamy; add unbeaten egg whites and beat until thick enough to spread onto the cake.
