In a medium saucepan, combine sugar, butter and honey. Stir over low heat until sugar dissolves. Simmer for 3-5 mins, until mixture is golden then stir in almonds. Spread almond mixture evenly over cookie base. Bake for 15-20 mins, until topping is golden brown. Let cool in pan for 5 mins. Cut into squares while still warm then let cool completely.
