Preheat your oven to 375 degrees.

Season your chicken with salt & pepper.

Heat a skillet over medium high heat with a tablespoon of olive oil. Add chicken & brown 3-4 minutes.

Turn and brown the other side. Place the skillet & chicken in your preheated oven for 7-8 minutes.

Remove and top with the fresh mozzarella. Return to the oven for 2-3 minutes until you have cheesy melted goodness.

While your chicken is finishing heat a pan over medium heat & add another splash of olive oil. Add the tomatoes & season with a little salt & pepper. Cook for about a minute.

Add the garlic, stir and cook for another minute or so.

Remove the chicken & plate. Top with the tomatoes & fresh basil.
