Cantabria Rustic Custard Squares

   Preheat oven to 375F.

   Grease 8-inch square baking pan; set aside.

   Reserve 3 Tbsp.

   of the crushed wafers; set aside.

   Beat butter and sugar in large bowl with electric mixer on medium speed until well blended.

   Add eggs, 1 at a time, mixing well after each addition.

   Blend in cottage cheese, milk, lemon zest and remaining crushed wafers.

   Pour batter into prepared pan; sprinkle top with reserved 3 Tbsp.
