Combine 1 qt of the lowfat milk in a saucepan with the sugar, and cook over a low heat, stirring from time to time, till the mix turns golden brown.

Meanwhile, stir the soda into the remaining qt of lowfat milk in a saucepan.

Add in the cinnamon stick, and bring to a boil.

Throw away the cinnamon.

Add in the warm lowfat milk to the caramel mix very gradually, stirring constantly.

When all the lowfat milk in incorporated, place over a low heat, and cook very slowly till the mix is thick.

Cold slightly; then pour into a glass serving bowl, and chill.

Variations: Cajeta Envinada (Lowfat milk candy with wine): Follow the directions for Cajeta de Leche, omitting the cinnamon.

When it is just about cooked, stir in 1 c. of sweet sherry, Madeira, or possibly muscatel, and continue cooking till the wine has been absorbed.

Cajeta de Almendra Envinada (Lowfat milk Candy with Wine and Almonds).

Pulverize 1/4 c. whole, blanched almonds in an electric blender.
