Buttery Sour Cream Potatoes (Pappas Con Mantequilla)

   In a large pot, add about 8 cups water.

   Bring water to boil.

   Cut the potatoes in half and place in pot.

   Cook for about 20 minute or until tender but NOT overcooked.

   Meanwhile potatoes are cooking, set oven to 425F In a baking sheet, place bacon in long strips and cook in oven for about 15 minute or until crispy.

   Once done, remove from oven and drain on a paper towel.

   When cooled, crumble bacon in a dish and set aside.

   Drain the potaotes and let cool.

   When cool enought to handle, peel the potatoes and cut each cooked potatoe in half.

    In a frying pan, melt the butter.

    IMPORTANT: Once butter is melted, turn heat to low and add the sour cream.

    Add the potatoes.

    Add salt to taste.

    Mix together SLOWLY over the low heat for about 3 minute or until heated thru.

    Turn off stove and add crumbled bacon.

    Stir bacon in gently.

    Serve warm as a side dish.
