Butterscotch Apples

   Heat the margarine in a medium skillet.

   Add the apples.

   Saute, stirring frequently, until they are tender but still hold their shape, 3 to 4 minutes, then remove from the heat.

   Meanwhile, combine the maple syrup, cashew butter, butterscotch extract to taste, and pie spice in a small saucepan.

   Heat until warm, whisking often until smooth.

   Pour the sauce over the apples and stir gently.

   Distribute the apples among individual serving bowls.

   Let cool for a few minutes.

   If desired, top each serving with a small dollop of yogurt and/or a few crushed walnuts.
