Buttermilk Crumb Cake

   In a mixing bowl, cream the butter and brown sugar.

   Add flour; mix until blended and crumbly. Set aside 1 cup for topping.

   To the remaining mixture, add egg, buttermilk, vanilla, baking soda and salt; stir just until blended.

   Pour into a greased 13in.x 9in.x 2in. baking pan.

   Sprinkle with the reserved crumb mixture.

   Bake at 375u00b0 for 30-35 minutes or until a toothpick inserted near the center comes out clean.

   Garnish with whipped cream if desired.
