Place 1 c. water, the butter and salt in a saucepan.

Heat to boiling.

Remove from heat, and add in flour all at once stirring vigorously till well mixed.

Add in Large eggs, one at a time, mixing till well blended after each addition.

In a deep kettle, heat oil to 370` on a frying thermometer.

Drop mix into oil by tablespoonfuls, frying 5 at a time in the following way: Fry for 2 min uncovered, 2 min covered, 2 min uncovered.

Drain on absorbent paper, and place in a dessert bowl.

Mix remaining ingredients with 4 c. water, and cook syrup till candy thermometer registers 222`.

Pour syrup over the fried bunuelos and serve hot.
