Place the flour, baking soda, salt and cinnamon in a separate bowl and mix to combine. Carefully add flour mixture into the butter mixture, scraping the sides of the bowl as necessary. Continue to mix until well blended. Stir in cinnamon chips.

Drop dough by the tablespoon onto parchment paper- or Silpat-lined cookie sheets. Leave about 2 inches in between each cookie. Bake just until edges are set, about 8-10 minutes. Remove pans from oven and set on a rack. Let cookies cool for 1 minute on baking sheets before removing to a cooling wrack.
