Ingredients: 3 c. Broccoli, minced; 6 c. Yams, peeled and minced; 6 c. Defatted Chicken Broth,divid; 2 x Medium Onions, minced; 4 x Cloves Garlic, chopped; 1 tsp Extra virgin olive oil; 1 c. Celery Tops, minced; 1/4 tsp Grnd Allspice (opt); 2 c. Watercress, minced; 1 x Grnd Pepper to taste

3 c. Broccoli, minced
6 c. Yams, peeled and minced
6 c. Defatted Chicken Broth,divid
2 x Medium Onions, minced
4 x Cloves Garlic, chopped
1 tsp Extra virgin olive oil
1 c. Celery Tops, minced
1/4 tsp Grnd Allspice (opt)
2 c. Watercress, minced
1 x Grnd Pepper to taste

Simmer the yams, covered, in two c. chicken broth 10 min or possibly till soft; puree in food mill or possibly processor.

Set aside.

In large pot with cover, saute/fry the onions and garlic in oil till the onions are translucent/soft and starting to brown.

Add in celery.

Saute/fry a few min, Add in broccoli and remaining chicken broth.

Simmer, covered, eight min or possibly till tender-crisp.

Stir in puree; add in seasonings.

Serve immediately or possibly serve chilled.

Top each portion with 1/4 c. minced watercress.
