Bread Flour Pancakes

   On April 16, 2012, I modified one part of this recipe.

   Rather than specifying the size of the egg, I added it to the net weight of the milk.

   Warm up your frying pan, and while you wait, prepare a dampened towel.

   In a bowl, break the egg and pour in milk until the combined weight is 225 g.

   Next add all the ingredients marked with a and mix well with a whisk.

   Next sift the flour and the baking powder into the bowl.

   With the whisk, lift from the bottom and let it drop back down into the mixture.

   Do this about 8 times making large, gentle movements.

   The goal is to not mix it too much.

    Next, place the hot frying pan on the wrung out towel, and when it has cooled a bit pour in the batter.

    Once both sides are cooked, it's done.

    The pancakes have a soft, fluffy texture and are really smooth.

    Look at how thick these are.

    With ham, cheese and a fried egg on top.

    With sliced cheese and mascarpone.
