Braised Beef Brisket Recipe

   Preheat oven to 325 degrees.

   Heat oil in a large ovenproof casserole or possibly Dutch oven over medium-high heat.

   Add in brisket and brown on all sides.

   Season with salt and pepper.

   Remove meat.

   Pour out all but 1 Tbsp.

   of oil, add in butter and cook onions over medium heat, stirring occasionally, till lightly browned, about 10 min.

   Stir in ketchup, garlic, stock and wine.

   Add in meat, cover tightly, transfer to preheated oven and cook 2 1/2 to 3 hrs, turning meat every hour.

    Remove meat to cutting board.

    Thicken sauce by boiling over high heat till desired consistency is reached.

    Add in salt and pepper to taste.

    Slice meat against the grain.

    Serve with sauce.
