Preheat oven to 350u00b0F. Line a 12 cup muffin pan with paper liners. Mix egg, sugar, vanilla, oil, buttermilk, lemon zest and 1 tbsp lemon juice. Fold in flour, baking powder and baking soda. Distribute batter between paper liners and bake for 20-25 mins. Allow to cool for 10 mins in the pan before removing to cool on a wire rack.

For the frosting, melt jelly and allow to cool slightly. Whisk together cream cheese, 1 tbsp lemon juice and powdered sugar. Set aside 1/3 of the frosting and add cooled jelly into the remaining 2/3.

Spread 1/2 the cupcakes with white frosting and decorate with smarties and brown and red icing to look like eyes. Transfer the pink frosting to a piping bag and pipe onto remaining muffins to look like brains.
