Bombay Chutney – a delicious recipe with green apple, onion, dates, cayenne, ground ginger, mustard. Easy to follow and perfect for any occasion.

For the Spiced Vinegar:.

Mix together all the spices and salt in a saucepan.

Add 1/2 cup vinegar and bring to a boil.

Boil for 2 minutes.

Add the remaining vinegar and boil for another 3 minutes.

Strain and cool.

For the Chutney:.

Peel the apples and remove the cores.

Chop the apples with the onions and dates.

Mix the cayenne, ginger and mustard with a tablespoon of the spiced vinegar.

Set aside.

Put the apples, onions and dates in a saucepan with the vinegar.

Bring to a boil.

Reduce heat and simmer until the mixture is soft.

Add the sugar and the cayenne mixture.

Boil for 3 minutes, stirring constantly.

Pour into warm sterilized jars and seal.
