Cook, stirring, for 1 min. Add tomatoes and red wine. Season. Simmer for 15-20 mins. Add 2 tbsp parsley. Reserve 1 cup. Freeze remainder for another dish.

Place flour in a large bowl. Cut in butter until mixture resembles coarse crumbs. Add milk and 1/2 cup water and quickly mix to a soft, sticky dough. Turn out onto a floured surface and knead lightly. Shape into 8 thin discs.

Distribute Bolognese sauce over 1/2 of each disc. Sprinkle with cheese and remaining parsley. Fold dough over and press edges to seal. Place on prepared trays, brush with egg and bake for 10-12 mins.
