Dissolve yeast in lukewarm water. Add 2 c. of flour to milk that has been scalded and cooled to lukewarm, add salt, sugar and butter, mix in dissolved yeast, stir well and allow to stand in warm place covered until light and spongy. place, until double in bulk, about 2 hours. Then roll out on lightly floured board to 1/2 inch thick. Cut with doughnut cutter and let rise on board about 30 minutes before frying. Fry in hot fat at 370u00b0 with raised side down first. Then turn and fry until golden brown and done. Sprinkle with sugar after draining on crumpled paper or frost with powdered sugar frosting.
