For the wine simple syrup:

In a saucepan add the sugar and white wine. Stir over medium-low heat until the sugar dissolves into the wine. Remove and let cool. Chill in the fridge until ready to use.

For the spritzers:

Add the blueberries along with the lemon peel and juice to a saucepan. Bring to a boil and simmer until the berries just begin to soften and burst. Remove the lemon peel and carefully spoon in the berries and juice into a food processor.

Puree until smooth and then strain through a mesh strainer into a large bowl or measuring cup and discard the solids. Slowly add in the club soda and stir.

Add ice cubes to glasses and add a couple tablespoons of the wine syrup (if using). Pour blueberry lemonade over top and stir before serving.

Garnish with fresh mint sprigs.
