Cut tomatoes in half and scoop out the guts.

There are handy little tomato gadgets that will make this really easy, but I have used a grapefruit spoon and a melon baller before and it worked fine.

A good pairing knife and some finesse will also do the trick.

Dab inside of each tomato with a paper towel to dry it up inside then sprinkle each half with salt and pepper......dont be shy.

Fill a Ziploc with sour cream and cut a corner to allow piping.

Put a small dollop of sour cream inside each tomato.

The only way these babies can go wrong is if you put too much sour cream inside each one.

Youre looking for a small dollop that should only fill half the space you made.

Then put a nice sized piece of bacon on top of the sour cream.

***HINT*** Buy the bacon at the salad bar area of your fancy grocery store.

It will be already cooked and only cost you about .75 cents!

If you dont have a fancy grocery store, move to the city.

Then nestle a full leaf (or two) of the parsley next to the bacon.

These can be refrigerated up to 12 hours ahead of time and then served.
