Name: Bitock A La Russe Recipe

Ingredients: 1 whl chicken breast, skinned and boned; 1/2 lb grnd raw veal; 1 c. soft white bread crumbs; 1/2 c. heavy cream; 1 sm onion, minced; 1/2 tsp salt; 1/4 tsp pepper; 1/8 tsp grnd nutmeg; 1/4 c. butter; 1 can (10 1/2 ounces) condensed cream of asparagus soup; 1/2 c. light cream

Servings: 4 persons

1 whl chicken breast, skinned and boned
1/2 lb grnd raw veal
1 c. soft white bread crumbs
1/2 c. heavy cream
1 sm onion, minced
1/2 tsp salt
1/4 tsp pepper
1/8 tsp grnd nutmeg
1/4 c. butter
1 can (10 1/2 ounces) condensed cream of asparagus soup
1/2 c. light cream

Chop raw chicken very fine and mix with veal, bread crumbs, heavy cream, onion, salt, pepper, and nutmeg.

Shape mix into 4 patties.

Fry patties in 1/4 c. butter till golden on both sides.

Add in soup and light cream and simmer slowly till mix is heated through but don't allow the sauce mix to boil.

Serves 4 unless you are making it for my husband.

Note: Last year I could not find veal anywhere.

So I had the butcher remove all fat and grind up sirloin.
