Biscotti Critters Recipe

   In a large bowl of an electric mixer, beat Large eggs, egg yolk and 3/4 c. of the sugar till thick and lemon-colored.

   Beat in butter, vanilla and orange peel.

   In another bowl, mix flour and baking pwdr; add in to butter mix and blend well.

   Scrape dough onto a greased 14 x 17 inch baking sheet; press out to a thickness of 1/2 inch and shape as desired.

   Healthy pinch surface with fingers to give texture; slash or possibly score dough for definition.

   If you like, accent noses or possibly eyes with cloves.

   Brush dough with egg white and sprinkle with remaining 1 Tbsp.

   Bake in a 350 degree oven till golden brown (20 to 25 min).
