1. Preheat oven to 400F

2. Combine flour, sugar, baking powder, and salt

3. Transfer to bowl of a stand mixer. Add eggs, yolk, citrus juice, and oil. Mix well

5. Transfer dough onto a slightly floured work surfuce and knead for a few minutes with palm of the hand pushing downward. Do not over knead. Shape into 3 even rolls

6. Lay rolls on a baking sheet lined with parchment paper, leaving a space between each (they will spread a little while they bake). Glaze with egg white and sugar or you can use egg yolk

7. Bake foe 20-25 minutes

8. Remove from oven and let cool. Slice diagonally, 1/2 in. thick. Return to baking sheet and put into 350F oven for 5 minutes on each side.
