Biglig'S Sultana Muffins

   Melt the butter and set aside to cool a little.

   Preheat the oven to 200C.

   In a large bowl mix the dry ingredients (flour, sugar, baking powder, oats, sultanas).

   In a jug whisk together the wet ingredients (butter,milk,egg).

   Combine the wet and dry to make a batter, stirring enough to ensure all the flour is incorporated but no more. (It is meant to look lumpy and horrible.)

   Spoon into a silicone 6-muffin tray.

   Bake for 20 minutes.

   Remove from oven and allow to cool on a wire rack.
