Bibb Lettuce Wedges With De-Light-Ful Ranch Dressing

   Remove and discard the outermost leaves of the lettuce. Trim the stem slightly to remove any tough or browned spots, but be sure to keep the head intact. Cut each head in half lengthwise so that each half is held together by a bit of stem. Place the lettuce halves on a serving plate and drizzle with the ranch dresssing. Serve immediately.

   If using regular yogurt, place it in a strainer lined with paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes. In a medium bowl, whisk together the strained or Greek-style yogurt with the remaining ingredients.
