Ingredients: 2 c. apples peeled, shredded; 1 1/3 c. sugar; 1 c. cranberries minced; 1 c. carrots shredded; 1 c. black walnuts minced; 2 1/2 c. all-purpose flour; 1 Tbsp. double-acting baking pwdr; 2 tsp baking soda; 1/2 tsp salt; 2 tsp grnd cinnamon; 2 x Large eggs beaten; 1/2 c. vegetable oil

In a large mixing bowl, combine apples and sugar.

Gently mix in minced cranberries, carrots, and nuts.

Combine dry ingredients; add in to mixing bowl.

Mix well to moisten dry ingredients.

Combine Large eggs and oil; stir into apple mix.

Fill 18 greased muffin tins 2/3 full.

Bake at 375 degrees for 20-25 min.

Cold 5 min beforeremoving from pans.
