Beefy Noodle Roll-Ups

   Preheat oven to 350.

   Cook lasagna noodles according to package directions.

   Coat a 9x13 baking dish with non-stick cooking spray and spread 1C salsa in the bottom.

   Set aside.

   Brown ground beef over medium heat; drain.

   Stir in taco seasoning mix and 1C salsa.

   Cut each noodle in half fill with 2 T. of the beef mixture, roll up.

   Place roll-ups in the baking dish.

   Pour remaining 1C salsa over the roll-ups & sprinkle with cheese.

    Cover the dish loosely with foil.

    Bake 20-25 minutes or until cheese is melted and roll-ups are heated through.

    To serve, spoon 1 T. of the sour cream on each roll-up and sprinkle with black olives.
