Combine the tequila, 2 tbsp of the lime juice, garlic, 1 tsp of oil, cilantro, oregano, cumin and pepper to taste in a large bowl. Add the beef and turn to coat. Cover and refrigerate for 1 hour or overnight to marinate.

Combine tomato and diced onion in a medium bowl and season. Cut the avocado in half, slice and sprinkle with the remaining 1 tbsp lime juice.

Heat a grill pan on high heat. Drain the beef and bring to room temperature. Toss the pepper and sliced onion in the remaining 2 tsp oil. Cook for 4 mins, tossing. Season the beef. Cook for 2-3 mins each side for rare, 3-4 mins for medium, brushing with the marinade.

Let stand for 2 mins, then cut into strips. Toss with the pepper and onion. Serve on tortillas with avocado, the tomato mixture and additional cilantro leaves.
