1 cup Mayonnaise
3/4 jar roasted red peppers
1/2 cup creamy gorgonzola cheese
1/4 cup chopped shallots
Beef:
1# deli beef
1/4 olive oil
2 TBS minced parsley
1 TBS minced thyme
T TBS minced rosemary
1/4 tsp red pepper flakes
1 baguette
1 clove garlic chopped and 1/3 cup of olive oil
2 cups spinich or arugla

Put mayo, roasted peppers, Gorgonzola and chopped shallots in a processor and puree

Marinate:

Combine olive oil and herbs then toss with rough chopped beef and allow to marinate 1 - 3 hours

Slice Baguette on the diagonal. Brush with olive oil and garlic mixture and toast in 350 deg. oven for 10 minutes or until lightly toasted

Place arugla leaf or spinanch leaf on baguette.

Top TBS of chopped beef on leaf then top with tsp of mayonaise mixture.
