Ingredients: 2 1/4 pounds beef stew meat cut into 3/4 inch pieces; 1/2 cup all purpose flour; 2 tablespoons olive oil; 3 onions halved; 2 cloves garlic minced; 2 slices bacon roughly chopped; 2 tablespoons tomato paste; 3 cups beef stock; 13 1/2 ounces chopped tomatoes; 1/4 cup worcestershire sauce; 2 potatoes peeled, roughly chopped; 1 sweet potato peeled, roughly chopped; 1 red pepper deseeded, chopped; 1 tablespoon fresh thyme leaves; mashed potatoes or crusty bread, to serve

1/2 cup all purpose flour
2 tablespoons olive oil
3 onions halved
2 cloves garlic minced
2 slices bacon roughly chopped
2 tablespoons tomato paste
3 cups beef stock
13 1/2 ounces chopped tomatoes
1/4 cup worcestershire sauce
2 potatoes peeled, roughly chopped
1 sweet potato peeled, roughly chopped

Lightly coat beef in flour, shaking off excess. Heat oil in a large saucepan. Cook beef, in batches, until browned. Set aside.

Cook onions, garlic and bacon in same pan, stirring, until bacon is crisp. Add tomato paste and cook, stirring, for 1 min. Return beef to pan along with stock, tomatoes and Worcestershire sauce. Bring to a boil then reduce heat and simmer, covered, for 1 hour, stirring occasionally.

Add potatoes, sweet potato and pepper. Simmer, uncovered, stirring occasionally, for 30 mins, or until beef is tender.

Sprinkle with thyme. Serve with mashed potatoes or crusty bread.
