1/2 pounds Beef Sirloin, Sliced In Thin Strips Against The Grain
1 teaspoon Soy Sauce
1 teaspoon Mirin
1/2 teaspoons Cornstarch
⅛ teaspoons Baking Soda
1 head Broccoli Cut Into Florets
1 Tablespoon Vegetable Oil
1 Tablespoon Ginger, Minced
1 clove Garlic, Minced
2 teaspoons Soy Sauce
2 Tablespoons Oyster Sauce
1 teaspoon Mirin
1 teaspoon Light Brown Sugar Or Granulated Sugar

In a medium bowl, combine beef, soy, mirin, cornstarch and baking soda.

Allow to marinate at room temperature for 1530 minutes.

In the meantime, bring a large pot of salted water to a boil.

In a large bowl, combine cold water and ice cubes for water bath.

Add broccoli to pot and parboil for 2 to 2 1/2 minutes; drain and shock in the ice water bath.

Drain when cool.

For the sauce, whisk together soy, oyster sauce, mirin and sugar in a small bowl.

In a separate bowl, dissolve the cornstarch in 1 teaspoon of water.

Heat oil in a large saute pan or wok over medium-high to high heat.

Add beef and stir fry for 12 minutes or until browned on both sides but not fully cooked through.

Add ginger and garlic; saute 30 seconds.

Add broccoli and sauce, and stir to combine.

Stir in cornstarch mixture.

Boil sauce for 13 minutes or until thickened.

Serve with steamed jasmine rice.
