Bechamel Sauce(Yields 1 Cup)

   Melt the butter in a saucepan over low heat.

   Add the flour and blend well for 5 minutes.

   Remove from heat and cool.

   Slowly stir in the warmed milk and add the onion and bay leaf.

   Cook and stir with a wooden spoon until sauce thickens and coats the back of spoon. Place in a preheated 350u00b0 oven for 20 minutes. Take out and strain; add salt and nutmeg.
