slice up onion, and saute in 1 tablespoon of olive oil in large saucepan until soft. Meanwhile, hand pull off the chicken meat from the chicken, discard carcass. Add chicken meat to onion, then add about 1/2 - 1 C of BBQ sauce and 2 tablespoons of white vinegar. Stir until thoroughly heated through.

Spoon chicken/onion BBQ mixture on the crust, top with monterey jack cheese, and drizzle some additional BBQ sauce over cheese. Bake at 375 degrees until bubbly.

NOTE: This pizza can also be done on the grill. Heat crust first on the grill, 1 min. each side. Then, put pizza together and place on tin foil and cook until cheese is bubbly, being careful not to burn the underside of the crust.
