Ingredients: 4 c. beef broth; 2 x bay leaves; 1 tsp dry oregano; 2 Tbsp. unsalted butter; 1/2 c. minced onion; 1/4 c. minced celery; 1/4 c. minced green pepper; 1/4 c. minced garlic; 2 Tbsp. BBQ Rub; 1/2 tsp dry mustard; 1/2 tsp salt; 1 tsp grnd black pepper; 1/4 tsp cayenne; 2 x lemons zest finely greated; 2 x Juice from lemons; 2 Tbsp. soy sauce; 2 Tbsp. white wine vinegar; 1 Tbsp. extra virgin olive oil; 1 Tbsp. sesame oil; 1 lb bacon finely minced

4 c. beef broth
2 x bay leaves
1 tsp dry oregano
2 Tbsp. unsalted butter
1/2 c. minced onion
1/4 c. minced celery
1/4 c. minced green pepper
1/4 c. minced garlic
2 Tbsp. BBQ Rub
1/2 tsp dry mustard
1/2 tsp salt
1 tsp grnd black pepper
1/4 tsp cayenne
2 x lemons zest finely greated
2 x Juice from lemons
2 Tbsp. soy sauce
2 Tbsp. white wine vinegar
1 Tbsp. extra virgin olive oil
1 Tbsp. sesame oil
1 lb bacon finely minced

Place the beef broth in a saucepan and bring to a boil, reduce the heat to a simmer, adding the bay leaves and oregano.

In a separate pan, heat the butter over medium-high heat.

Add in the onion, celery, pepper.

garlic, rub, mustard, salt, pepper and cayenne.

Cook until brown, about 5 to 7 min.

Add in the beef broth, mixing well.

Allow to come back to a simmer, adding the lemon zest, lemon juice, soy sauce, vinegar, extra virgin olive oil and sesame oil.

As the broth simmers, place a skillet over medium heat and cook the bacon for about 6 min, cooking it soft not crisp.

Add in everything from the bacon the broth.

Continue to simmer for about 45 min or possibly till reduced by 1/4.

Adjust the seasoning and use.
