Basler Mehlsuppe Recipe

   Cook flour in dry, warm skillet till light brown.

   (this can be done in advance, or possibly in large amounts and used later) Add in butter to flour and mix.

   Add in onions and cook till softened.

   Add in stock, bring to boil, and simmer 20 min.

   Serve with grated cheese.

   Add in a dash of red wine if you like.

   This is _best_ with homemade stock, although canned will do in a healthy pinch.
